Pretoria turns 159!

Summer in Pretoria is one of the most beautiful things you will ever experience: perfect sunny days followed by breezy moonlit dinners on the patio or, our favourite, indulgent summer brunches under the Jacaranda trees.

In celebration of Pretoria’s 159th birthday, I Love Pretoria put together a little feast of our own, which saw us baking and brewing at the crack of dawn and Pretoria later joined in all it’s glory with a thunderstorm that lasted until the late afternoon.

We decided to do simple, tried and trusted flapjacks with an I Love Pretoria-twist. For mains we layered some delicious, rich mascarpone and crispy bacon, topped with fresh cherries. Then, of course, we could not skip an opportunity to add a little something sweet to the mix and made a dessert stack to follow. For this, we stacked the same flapjacks (which are amazingly low in carbs, by the way), with our super yummy chocolate mousse and some almonds for garnish.

Mascarpone & Crispy Bacon Stack 
Chocolate Mousse Flapjack Stack

Flapjack Recipe:

• 100g oatmeal flour
• Pinch of salt
• 3 eggs
• 2 tablespoons honey

Method:

Blend the oatmeal flour and salt together in a mixing bowl.
Whisk the eggs and honey together and add the mixture to the flour.
Blend thoroughly.

In a pan, add tablespoons of dough to form the flapjacks. Bake on both sides.

Chocolate Mousse Recipe:

• 2 bananas
• 1 avocado (ripe)
• 1 tablespoon smooth peanut butter
• 1 tablespoon honey
• 2 tablespoons cocoa

Blend all the ingredients together.

Layer the mousse and the flapjacks and garnish with toasted almonds and cherries or strawberries.

Cocoa Milk Recipe:

• 500 ml milk
• 2 tablespoons cocoa
• 2 tablespoon honey (can add more honey according to taste)
